Easy Hamburger Rice Casserole
Ingredients
- 1 pound (450g) ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup uncooked long-grain white rice
- 1 can (10.5 oz or 295g) condensed cream of mushroom soup
- 1 can (10.5 oz or 295g) condensed cream of chicken soup
- 1 can (14.5 oz or 410g) diced tomatoes, undrained
- 1 cup (240ml) beef broth
- 1 cup (240ml) water
- 1 cup (115g) shredded cheddar cheese
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish, optional)
Instructions
- Preheat the oven:
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch (23x33cm) baking dish or a similar-sized casserole dish.
- Cook the ground beef:
- In a large skillet over medium heat, cook the ground beef until browned, breaking it up with a spoon as it cooks. Drain any excess fat.
- Add the chopped onion and minced garlic to the skillet and cook for another 2-3 minutes, until the onion is translucent and the garlic is fragrant.
- Combine ingredients:
- In a large bowl, combine the cooked ground beef mixture, uncooked rice, cream of mushroom soup, cream of chicken soup, diced tomatoes (with their juice), beef broth, water, Worcestershire sauce, dried thyme, dried basil, salt, and pepper. Mix well to combine.
- Assemble the casserole:
- Pour the mixture into the prepared baking dish. Use a spatula to spread it out evenly.
- Bake:
- Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes.
- Remove the foil and sprinkle the shredded cheddar cheese evenly over the top of the casserole. Return to the oven and bake, uncovered, for an additional 10-15 minutes, or until the cheese is melted and bubbly and the rice is tender.
- Serve:
- Remove the casserole from the oven and let it sit for a few minutes before serving.
- Garnish with chopped fresh parsley, if desired.
