Spicy Butter Chicken Wings

Ingredients

For the Marinade:

  • 2 pounds (900g) chicken wings, separated into drumettes and wingettes
  • 1/2 cup plain yogurt
  • 2 tablespoons lemon juice
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 tablespoon garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cayenne pepper (adjust to taste for spiciness)
  • Salt and pepper, to taste

For the Sauce:

  • 2 tablespoons butter
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cayenne pepper (adjust to taste for spiciness)
  • 1 can (14.5 oz or 400g) tomato sauce
  • 1/2 cup heavy cream
  • 2 tablespoons chopped fresh cilantro (for garnish)
  • Salt, to taste

Instructions

  1. Marinate the Chicken Wings:
  • In a large bowl, combine the yogurt, lemon juice, garlic, ginger, garam masala, cumin, coriander, paprika, turmeric, cayenne pepper, salt, and pepper.
  • Add the chicken wings and toss to coat evenly. Cover and marinate in the refrigerator for at least 2 hours, or overnight for best results.
  1. Bake the Chicken Wings:
  • Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil and place a wire rack on top.
  • Arrange the marinated chicken wings on the wire rack in a single layer. Bake for 35-40 minutes, turning halfway through, until the wings are crispy and cooked through.
  1. Prepare the Sauce:
  • While the wings are baking, melt the butter in a large skillet over medium heat. Add the chopped onion and cook until soft and translucent, about 5 minutes.
  • Add the minced garlic and ginger and cook for another 1-2 minutes until fragrant.
  • Stir in the cumin, coriander, paprika, turmeric, and cayenne pepper. Cook for 1-2 minutes to toast the spices.
  • Add the tomato sauce and bring to a simmer. Let it cook for about 10 minutes, stirring occasionally.
  • Stir in the heavy cream and cook for another 2-3 minutes until the sauce is heated through and slightly thickened. Season with salt to taste.
  1. Combine the Wings and Sauce:
  • Once the wings are done baking, add them to the skillet with the sauce. Toss to coat the wings evenly with the sauce.
  1. Serve:
  • Transfer the wings to a serving platter and garnish with chopped fresh cilantro.
  • Serve hot, with extra sauce on the side if desired.
