Fall Off The Bone Ribs

Ingredients

For the Ribs:

  • 2 racks of baby back ribs (about 4-5 pounds total)
  • 1/4 cup yellow mustard (optional, as a binder for the rub)

For the Dry Rub:

  • 1/4 cup brown sugar
  • 1 tablespoon paprika
  • 1 tablespoon smoked paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon chili powder
  • 2 teaspoons ground black pepper
  • 2 teaspoons salt
  • 1 teaspoon cayenne pepper (optional, for heat)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme

For the BBQ Sauce (optional, you can use store-bought):

  • 1 cup ketchup
  • 1/4 cup apple cider vinegar
  • 1/4 cup brown sugar
  • 2 tablespoons molasses
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Prepare the Ribs:
  • Preheat your oven to 275°F (135°C).
  • Remove the membrane from the back of the ribs by sliding a knife under the membrane and then pulling it off with your fingers or using a paper towel to grip it.
  1. Apply the Dry Rub:
  • If using mustard as a binder, rub a thin layer of mustard on both sides of the ribs.
  • In a bowl, mix all the dry rub ingredients together. Generously apply the dry rub to both sides of the ribs, pressing it into the meat.
  1. Cook the Ribs:
  • Wrap each rack of ribs tightly in aluminum foil, making sure they are completely sealed to trap the steam inside.
  • Place the wrapped ribs on a baking sheet and bake in the preheated oven for 2.5 to 3 hours, or until the ribs are very tender.
  1. Prepare the BBQ Sauce (if making homemade):
  • While the ribs are cooking, combine all BBQ sauce ingredients in a saucepan over medium heat. Bring to a simmer, stirring occasionally, until the sauce thickens slightly, about 15-20 minutes. Adjust seasoning to taste.
  1. Finish the Ribs:
  • Preheat your grill to medium-high heat or preheat your oven broiler.
  • Carefully remove the ribs from the oven and unwrap them from the foil. Brush both sides of the ribs with the BBQ sauce.
  • Place the ribs on the grill (or on a baking sheet under the broiler) and cook for about 5-10 minutes, basting with more BBQ sauce and turning occasionally, until the sauce is caramelized and the ribs have a slight char.
  1. Serve:
  • Remove the ribs from the grill or broiler and let them rest for a few minutes.
  • Cut the ribs between the bones, serve with extra BBQ sauce on the side if desired, and enjoy the tender, fall off the bone goodness!
