Beignets Fourrés au Chocolat
Ingredients
For the Dough:
- 2 1/2 cups (320g) all-purpose flour
- 1/4 cup (50g) granulated sugar
- 1 packet (2 1/4 teaspoons) active dry yeast
- 1/2 teaspoon salt
- 1/2 cup (120ml) whole milk, warmed (about 110°F/45°C)
- 1/4 cup (60ml) water, warmed (about 110°F/45°C)
- 2 large eggs
- 4 tablespoons (55g) unsalted butter, softened
- 1 teaspoon vanilla extract
For the Filling:
- 1 cup (180g) chocolate chips or chopped chocolate
- 1/4 cup (60ml) heavy cream
For Frying:
- Vegetable oil, for frying
For Dusting:
- Powdered sugar
Instructions
- Prepare the Dough:
- In a small bowl, combine the warm milk and water. Sprinkle the yeast over the top and let it sit for about 5 minutes until it becomes frothy.
- In a large mixing bowl, combine the flour, sugar, and salt. Make a well in the center and add the yeast mixture, eggs, softened butter, and vanilla extract.
- Mix until the dough comes together. Turn it out onto a lightly floured surface and knead for about 8-10 minutes until the dough is smooth and elastic. Alternatively, you can use a stand mixer with a dough hook attachment.
- Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 to 1.5 hours, or until it has doubled in size.
- Prepare the Chocolate Filling:
- In a small saucepan, heat the heavy cream until it just begins to simmer. Remove from heat and add the chocolate chips or chopped chocolate.
- Let it sit for a minute, then stir until the chocolate is completely melted and smooth. Allow it to cool and thicken slightly.
- Shape the Beignets:
- Punch down the risen dough and turn it out onto a lightly floured surface. Roll it out to about 1/2-inch (1.3 cm) thickness.
- Using a round cookie cutter or a glass (about 3 inches/7.5 cm in diameter), cut out circles of dough.
- Place a teaspoon of the chocolate filling in the center of half of the dough circles. Brush the edges with a little water, then place another dough circle on top and press the edges to seal.
- Place the filled beignets on a baking sheet lined with parchment paper. Cover with a clean kitchen towel and let them rise for another 30 minutes.
- Fry the Beignets:
- In a large, deep pot, heat vegetable oil to 350°F (175°C). Carefully fry the beignets in batches, about 2-3 minutes per side, until golden brown.
- Use a slotted spoon to remove the beignets from the oil and place them on a paper towel-lined plate to drain.
- Dust and Serve:
- Once the beignets are cool enough to handle, dust them generously with powdered sugar.
