Chocolate Chip Cookie Dough Brownie Bombs

Ingredients

For the Brownies:

  • 1 box of brownie mix (plus ingredients listed on the box: eggs, oil, water)
  • OR homemade brownies (see below for ingredients)

For the Cookie Dough:

  • 1/2 cup (115g) unsalted butter, softened
  • 3/4 cup (150g) packed brown sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk
  • 1 1/4 cups (155g) all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup (170g) mini chocolate chips

For the Coating:

  • 16 ounces (450g) semi-sweet or milk chocolate, melted
  • Optional: Sprinkles, extra mini chocolate chips, or sea salt for garnish

Instructions

  1. Prepare the Brownies:
  • Preheat your oven and prepare the brownie mix according to the package instructions. Bake the brownies in a 9×13-inch pan and let them cool completely.
  • If making homemade brownies, you can use your favorite recipe or try this one:
    • 1/2 cup (115g) unsalted butter
    • 1 cup (200g) granulated sugar
    • 2 large eggs
    • 1 teaspoon vanilla extract
    • 1/3 cup (40g) unsweetened cocoa powder
    • 1/2 cup (65g) all-purpose flour
    • 1/4 teaspoon salt
    • 1/4 teaspoon baking powder
    • Preheat oven to 350°F (175°C). Melt the butter, then stir in the sugar, eggs, and vanilla. Beat in the cocoa powder, flour, salt, and baking powder. Spread the batter into a greased 9×13-inch pan and bake for 20-25 minutes. Allow to cool completely.
  1. Prepare the Cookie Dough:
  • In a large bowl, cream together the softened butter and brown sugar until light and fluffy.
  • Mix in the vanilla extract and milk.
  • Gradually add the flour and salt, mixing until combined.
  • Stir in the mini chocolate chips.
  • Refrigerate the cookie dough for about 30 minutes to firm up.
  1. Assemble the Brownie Bombs:
  • Cut the cooled brownies into small squares (about 1 to 1.5 inches each).
  • Take a small scoop of cookie dough and flatten it slightly. Place a brownie square in the center and wrap the cookie dough around it, rolling it into a ball. Repeat with the remaining brownies and cookie dough.
  1. Coat with Chocolate:
  • Melt the chocolate in a microwave-safe bowl in 30-second intervals, stirring between each until smooth.
  • Dip each brownie bomb into the melted chocolate, using a fork to roll it around and ensure it’s fully coated. Lift it out and allow any excess chocolate to drip off.
  • Place the coated brownie bombs on a baking sheet lined with parchment paper. If desired, sprinkle with sprinkles, extra mini chocolate chips, or sea salt before the chocolate sets.
  1. Chill and Serve:
  • Place the brownie bombs in the refrigerator for about 30 minutes to allow the chocolate to set.
  • Once the chocolate is firm, the brownie bombs are ready to serve.
