Ingredients
- 12 ounces (340g) fettuccine pasta
- 1 pound (450g) calamari, cleaned and cut into rings and tentacles
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 small onion, finely chopped
- 1/2 cup (120ml) dry white wine
- 1 cup (240ml) heavy cream
- 1/2 cup (120ml) chicken or vegetable broth
- 1/2 cup (50g) grated Parmesan cheese
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon red pepper flakes (optional, for heat)
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the Fettuccine:
- Bring a large pot of salted water to a boil. Add the fettuccine pasta and cook according to the package instructions until al dente. Drain and set aside.
- Prepare the Calamari:
- Ensure the calamari is cleaned and cut into rings and tentacles. Pat dry with paper towels to remove excess moisture.
- Cook the Calamari:
- In a large skillet, heat the olive oil over medium-high heat.

- Combine and Serve:
- Add the cooked fettuccine and calamari back to the skillet with the sauce. Toss gently to coat the pasta and calamari evenly with the sauce.
- Cook for another 1-2 minutes, until everything is heated through.
- Garnish and Serve:
- Divide the creamy calamari fettuccine among serving plates.
- Garnish with chopped fresh parsley and additional grated Parmesan cheese if desired.
