Ingredients

  • 1 cup (150g) hazelnuts
  • 1 cup (200g) granulated sugar
  • 3/4 cup (170g) unsalted butter, softened
  • 4 large eggs
  • 1 cup (125g) all-purpose flour
  • 1/2 cup (50g) cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup (120ml) whole milk
  • Powdered sugar (for dusting, optional)
  • Fresh berries or whipped cream (for serving, optional)

Instructions

  1. Preheat the oven:
  • Preheat your oven to 350°F (175°C). Grease and flour a mini muffin tin or small cake molds.
  1. Roast the hazelnuts:
  • Spread the hazelnuts on a baking sheet and roast in the preheated oven for 10-15 minutes, or until they are golden brown and fragrant. Remove from the oven and let them cool slightly.
  • Once cooled, rub the hazelnuts between your hands or in a clean kitchen towel to remove the skins. Coarsely chop the hazelnuts and set aside.
  1. Prepare the batter:
  • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  1. Combine the dry ingredients:
  • In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt.

  • Gradually add the dry ingredients to the butter mixture, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
  • Gently fold in the chopped, roasted hazelnuts.

  • Spoon the batter into the prepared mini muffin tin or small cake molds, filling each mold about two-thirds full.
  • Bake in the preheated oven for 12-15 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
  • Remove the cakes from the oven and let them cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

  • Dust the cooled mini cakes with powdered sugar if desired.
