ULTRA CRISPY POTATOES

Ingredients

  • 2 pounds (900g) Yukon Gold or Russet potatoes
  • 1/4 cup (60ml) olive oil or vegetable oil
  • 1 teaspoon baking soda
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped (optional)
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish, optional)

Instructions

  1. Preheat the oven:
  • Preheat your oven to 450°F (230°C). Place a large baking sheet in the oven to heat up.
  1. Prepare the potatoes:
  • Peel the potatoes and cut them into chunks (about 1 to 2 inches in size). Try to keep the pieces similar in size for even cooking.
  1. Parboil the potatoes:
  • Fill a large pot with water and bring it to a boil. Add 1 teaspoon of baking soda and a generous amount of salt to the boiling water. The baking soda helps break down the potato surface, enhancing the crispiness.
  • Add the potato chunks to the boiling water and cook for about 8-10 minutes, or until the edges start to soften but the potatoes are still firm in the center.
  1. Drain and rough up the potatoes:
  • Drain the potatoes in a colander and let them sit for a minute to allow excess moisture to evaporate.
  • Shake the colander gently to roughen up the edges of the potatoes. This helps create a crispy exterior when roasting.
  1. Season the potatoes:
  • In a large bowl, toss the potatoes with olive oil (or vegetable oil), minced garlic, chopped rosemary (if using), salt, and black pepper. Make sure the potatoes are evenly coated with the oil and seasonings.
  1. Roast the potatoes:
  • Carefully remove the preheated baking sheet from the oven and spread the potatoes in a single layer on the sheet. The hot baking sheet helps to start the crisping process immediately.
  • Roast in the preheated oven for 20 minutes. After 20 minutes, use a spatula to flip the potatoes to ensure even browning.
  • Continue to roast for an additional 20-25 minutes, or until the potatoes are golden brown and crispy.
  1. Garnish and serve:
  • Remove the potatoes from the oven and sprinkle with fresh parsley, if desired.
  • Serve immediately while they are hot and crispy.
