Ingredients

  • 2 pounds (900g) potatoes (preferably Russet or Yukon Gold)

  • 1/4 cup fresh parsley, chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt

Instructions

  1. Prepare the Potatoes:
  • Peel and cut the potatoes into chunks. Place them in a large pot and cover with cold water. Add a pinch of salt and bring to a boil. Cook until the potatoes are tender, about 15-20 minutes.
