Ingredients

  • 12 ounces (340g) fettuccine pasta
  • 1 pound (450g) calamari, cleaned and cut into rings and tentacles
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1/2 cup (120ml) dry white wine
  • 1 cup (240ml) heavy cream
  • 1/2 cup (120ml) chicken or vegetable broth
  • 1/2 cup (50g) grated Parmesan cheese
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon red pepper flakes (optional, for heat)
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the Fettuccine:
  • Bring a large pot of salted water to a boil. Add the fettuccine pasta and cook according to the package instructions until al dente. Drain and set aside.
  1. Prepare the Calamari:
  • Ensure the calamari is cleaned and cut into rings and tentacles. Pat dry with paper towels to remove excess moisture.
  1. Cook the Calamari:
  • In a large skillet, heat the olive oil over medium-high heat.
  • Add the calamari to the skillet and cook for about 2-3 minutes, or until it turns opaque. Be careful not to overcook, as calamari can become rubbery. Remove the calamari from the skillet and set aside.

  • In the same skillet, add the minced garlic and chopped onion. Sauté for about 2-3 minutes, or until the onion is translucent and the garlic is fragrant.

  • Add the cooked fettuccine and calamari back to the skillet with the sauce. Toss gently to coat the pasta and calamari evenly with the sauce.
  • Cook for another 1-2 minutes, until everything is heated through.

  • Garnish with chopped fresh parsley and additional grated Parmesan cheese if desired.
