Ingredients

  • 1 pound (450g) large shrimp, peeled and deveined
  • 4 tablespoons butter
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • ½ cup dry white wine (such as Sauvignon Blanc or Pinot Grigio) or chicken broth
  • 1 lemon, juiced (about 3 tablespoons)
  • ¼ teaspoon red pepper flakes (optional)
  • Salt and pepper, to taste
  • ¼ cup fresh parsley, chopped
  • 1 tablespoon fresh lemon zest (optional, for garnish)
  • 8 ounces (225g) linguine or spaghetti (optional, if serving with pasta)

Instructions

Step 1: Cook the Pasta (if using)

  1. Boil the pasta: If serving with pasta, bring a large pot of salted water to a boil. Add the linguine or spaghetti and cook according to the package instructions until al dente. Reserve ½ cup of pasta cooking water, then drain the pasta and set aside.

Step 2: Prepare the Shrimp Scampi

  1. Heat the skillet: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
  2. Cook the shrimp: Add the shrimp to the skillet in a single layer. Season with salt and pepper. Cook for 2-3 minutes on each side, or until the shrimp are pink and opaque. Remove the shrimp from the skillet and set aside.
  3. Add the garlic: In the same skillet, add 4 tablespoons of butter. Once melted, add the minced garlic and cook, stirring frequently, until fragrant (about 1 minute).
  4. Add the wine and lemon juice: Pour in the dry white wine (or chicken broth) and lemon juice. Bring the mixture to a simmer and cook for 2-3 minutes, allowing the sauce to reduce slightly.
  5. Combine shrimp with sauce: Add the cooked shrimp back into the skillet along with any accumulated juices. Toss to coat the shrimp in the sauce. Add red pepper flakes, if using.

Step 3: Finish and Serve

  1. Add parsley: Stir in the chopped fresh parsley.
  2. Combine with pasta (if using): If serving with pasta, add the cooked linguine or spaghetti to the skillet. Toss to combine, adding reserved pasta water a little at a time if needed to thin the sauce.
  3. Garnish: Garnish with fresh lemon zest, if desired.

Step 4: Serve

  1. Plate the dish: Serve the shrimp scampi immediately, either on its own or over the pasta.
